Shakshuka
Eggs poached in a spicy tomato and pepper sauce, finished in the oven and served with crusty bread.

Ingredients
- 1 onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves
- 1 jalapeno, diced
- 1 tsp cumin
- 1 tsp paprika
- Dash of cayenne
- 1 can crushed or diced tomatoes
- Salt and pepper
- 4-6 eggs
- 1 bunch cilantro
- Handful of feta cheese (optional)
- 1 loaf crunchy, crusty bread

Heat oven to 375°F.

Sweat onion and bell pepper in a large skillet. Add garlic and jalapeno. Add spices, salt, and pepper. Cook for a few minutes.

Add tomatoes and simmer until thickened.

Make wells in the sauce and gently crack eggs into them. Transfer pan to oven and cook 7-10 minutes, until eggs are just set.

Toast bread and serve with shakshuka topped with cilantro and feta if desired.
