Thai curry soup
Tastes just like mama never used to make.
Ingredients
- Oil
- 1 onion
- 1 Tbsp ginger, grated
- 5+ cloves garlic, grated
- 2 Tbsp red curry paste or curry powder
- Garlic powder
- Onion powder
- 1 bell pepper, chopped
- 1 carrot, chopped
- 1 jalapeno, chopped
- 1 Tbsp chili garlic sauce
- 2 Tbsp soy sauce
- 1 quart vegetable broth
- 1 can coconut milk
- 1 package extra firm tofu, cut into cubes
- 1 cup edamame, shelled
- 1 bunch spinach, kale, etc.
- 1 lime
- Garnish: green onion, cilantro, sesame seeds
- Optional: udon noodles, rice

Saute the onion, ginger, and garlic in oil of choice.

Add the curry powder or paste and other spices. Cook until fragrant.

Add the peppers and carrots. Cook until soft.

Add the soy sauce and chili sauce. Warm through.

Add broth, coconut milk, tofu, and edamame. Cook for 10-15 minutes until hot.

Add greens at the end and cook until wilted. Finish with limes and garnish.
